The two that come to mind are Justin Metcalf and Ben Hassett. You could also contact John Lovett at Falls Mill in Belvidere Tennessee, he might have some other names.
Justin Metcalf of Metcalf Mills in Mars Hill, NC, is the only millwright I know of.
